I cater a lot of different events with various menus. The clients/guests come and pay us compliments but they also request recipes.
Over the month of May I will be releasing a lot of those recipes but today here is my most sought after Turmeric Chicken recipe.
Serves 4-6 People
INGREDIENTS
1 x Whole Free Range Organic Chicken
2 Tbsp Turmeric
4 Cloves Organic Garlic - Crushed
200ml White Wine (I use Sauvignon Blanc)
5g Himalayan Pink Salt - ground
5g Cracked Black or White Pepper
5g Smoked Paprika - organic if possible
50ml Extra Virgin Olive Oil
METHOD
Pre-heat oven to 170C.
Place chicken into a baking tray lined with baking paper.
Combine all the other ingredients and, using a pastry brush, spread the mix all over the chicken including in between crevices of the legs and wings.
Any remaining ingredients place into the cavity of the chicken.
Cook in the middle of the oven for aprox 1.5 hours (depending on how big your chicken is), check to see that the joints are cooked through by sliding a knife down the side of one of the legs. If there is no blood and the liquid runs clear then it is ready.
Take chicken out of the oven and allow to rest for 5 minutes.
Using chicken shears cut chicken into 4 quarters or if you prefer smaller pieces and serve on a platter accompanies with an Organic Salad or Steamed Vegetables.
