Makes around 18.
Preparation: Turn oven on to 190C or 180C if fan forced.
Line a Baking Tray with Baking Paper
Ingredients:
1 pkt Greek Style Filo Pastry (Use normal if you are not close to a deli)
1 cup finely diced Organic Spinach leaves
1/2 Red Onion finely diced
1 tsp Organic Nutmeg
125g Greek Feta - crumbled
Pinch of Greek Oregano
Salt and Pepper - I use Himalayan Pink Rock Salt and Cracked Black a good pinch of each
1 Free Range Egg - lightly Beaten
1/2 cup Olive Oil (light Olive Oil is best not extra virgin due to the strong flavour)
Method:
In a small bowl add the feta, spinach, egg and seasoning and combine.
Unroll the filo and place one sheet in the middle of your kitchen bench. Brush very lightly with olive oil then fold in half.
Lightly brush both sides of the halved sheet with olive oi.
With a teaspoon use one very small spoon full of mixture to the edge that is closest to you but only in the middle for about the length of a credit card.
Roll into a long thin sausage shape. From the left pinch the ends together and curl the pastry around the pinched end towards you. Your Spanikopita Scroll should look like a little snail.
Repeat with remaining ingredients then place on baking tray... brush with a little more olive oil if pastry is drying out.
In your pre-heated oven bake for 18-20 mins depending on your oven.... you will know they are ready when browned on the top.'
Serve with fresh made Tzytzyki.
