This Creates 4 Medium Size Pizza Bases

INGREDIENTS:
500g Strong Flour ( I use Organic Unbleached from a supplier but you can use Plain Unbleached/organic Flour)
2 tsp Yeast
1 tbsp Extra Virgin Olive Oil
1/2 tsp Fine Raw Sugar (don't omit sugar as it is the food for the yeast)
300ml warm Water (tepid around 32C)

METHOD:
In a food processor place the flour, sugar and Olive oil.
Place yeast in tepid water and allow to sit for 2 mins until frothy.

On low speed start mixing through ingredients and then pour in the water/yeast mix. The dough should come together to form a moist dough... if too dry (humidity and cold can change the amount of water required) add a little more tepid water until the dough comes together as a smooth moist dough.

Mix on medium speed for up to 10 mins to create a glutinous dough.

Flour a clean work surface and turn the dough out. Knead a little with your hands and then roll into a ball.
Lightly grease a bowl with olive oil and place the dough ball into the bowl. Seal with glad wrap then place a tea-towel dampened with hot water over the top and set aside in a warm place.

Allow to rest for 1 hour.

Turn back onto a floured work surface and knock back by kneading or pushing out the air. Roll into a ball again and divide into 4 equal pieces. Place these pieces under a warm damp tea-towel and rest again for 30 minutes.

Oil 4 Medium sized Pizza trays then, using a rolling pin, roll out each piece of dough and stretch onto each oiled tray.
Allow to rest at least 2 mins before topping.

When baking your pizza use the hottest setting on your oven - pizza should take between 10-12 minutes to cook in a hot oven.
